Ingredients
- 1 large zucchini, sliced into 1-inch half-moons
- 2 tablespoons olive oil
- ½ cup Greek yogurt or labneh
- 2 tablespoons fresh mint, roughly chopped
- Zest of 1 lemon
- Salt and pepper to taste
- Green olives (optional, for garnish)
Instructions
- Prepare the Zucchini:
- Slice the zucchini into half-moons and season with salt and pepper.
- Cook the Zucchini:
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add the zucchini slices in a single layer and sauté for about 5 minutes, flipping once, until golden brown on both sides.
