Ingredients
For the Cajun Seasoning:
- 1½ teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon oregano
- ½ teaspoon cayenne pepper
- ¼ teaspoon red pepper flakes
For the Skillet:
- 1⅓ cups white long-grain rice
- 2⅔ cups chicken broth
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons butter (divided)
- 1 teaspoon minced garlic
Instructions
- Make the Cajun Seasoning:
- In a small bowl, mix together paprika, salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and red pepper flakes. Set aside.
- Sauté the Rice:
- Heat 2 tablespoons of butter in a large skillet over medium heat.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in the rice and half of the Cajun seasoning, coating the grains in the butter and spices.
- Cook the Rice:
- Add chicken broth to the skillet and stir. Bring to a boil, then reduce heat to low and cover.
- Simmer for 15 minutes or until the liquid is absorbed and the rice is tender.
- Prepare the Shrimp:
- Toss the shrimp with the remaining Cajun seasoning and 2 tablespoons of melted butter.
- Cook the Shrimp:
- Once the rice is done, arrange the shrimp on top in a single layer. Cover and cook for 3–5 minutes, or until the shrimp are pink and fully cooked.
- Serve:
- Fluff the rice with a fork, ensuring the spices are evenly distributed.
- Serve hot, garnished with fresh parsley or a squeeze of lemon if desired.
