Description

A bold and flavorful one-pan dish featuring tender shrimp, fluffy rice, and smoky Cajun spices. Perfect for busy weeknights or a cozy family dinner.

Ingredients

For the Cajun Seasoning:

  • 1½ teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon red pepper flakes

For the Skillet:

  • 1⅓ cups white long-grain rice
  • 2⅔ cups chicken broth
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons butter (divided)
  • 1 teaspoon minced garlic

Instructions

  • Make the Cajun Seasoning:
    • In a small bowl, mix together paprika, salt, garlic powder, black pepper, onion powder, oregano, cayenne pepper, and red pepper flakes. Set aside.
  • Sauté the Rice:
    • Heat 2 tablespoons of butter in a large skillet over medium heat.
    • Add minced garlic and sauté for 30 seconds until fragrant.
    • Stir in the rice and half of the Cajun seasoning, coating the grains in the butter and spices.
  • Cook the Rice:
    • Add chicken broth to the skillet and stir. Bring to a boil, then reduce heat to low and cover.
    • Simmer for 15 minutes or until the liquid is absorbed and the rice is tender.
  • Prepare the Shrimp:
    • Toss the shrimp with the remaining Cajun seasoning and 2 tablespoons of melted butter.
  • Cook the Shrimp:
    • Once the rice is done, arrange the shrimp on top in a single layer. Cover and cook for 3–5 minutes, or until the shrimp are pink and fully cooked.
  • Serve:
    • Fluff the rice with a fork, ensuring the spices are evenly distributed.
    • Serve hot, garnished with fresh parsley or a squeeze of lemon if desired.

Notes

  • Shrimp Tips: Shrimp cook quickly; keep an eye on them to prevent overcooking.
  • Add Veggies: For a colorful twist, add diced bell peppers or spinach.
  • Adjust Spice Level: Reduce the cayenne pepper for a milder flavor.
