Ingredients
- 2 cups cooked chicken, shredded
- 1 ripe avocado, diced
- 1 cup shredded cheddar cheese
- 1 cup ranch dressing
- 1 cup cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 4 large flour tortillas
- 1 cup lettuce, shredded
- 1 medium tomato, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded chicken, diced avocado, shredded cheddar cheese, ranch dressing, cooked rice, black beans, and diced tomato. Mix well until all ingredients are evenly coated. Season with salt and pepper to taste.
- Heat a large skillet over medium heat and add the olive oil. Once hot, place one tortilla in the skillet for about 30 seconds to warm it up.
- Remove the tortilla from the skillet and place it on a clean surface. Spoon a generous amount of the chicken mixture onto the center of the tortilla. Top with shredded lettuce.
- Fold in the sides of the tortilla and then roll it up from the bottom to the top, ensuring the filling is secure inside.
- Repeat the process with the remaining tortillas and filling.
- If desired, return the burritos to the skillet seam-side down and cook for an additional 2-3 minutes on each side until golden brown and crispy.
- Slice the burritos in half and serve with extra ranch dressing or salsa on the side.
