Description

This Chicken Zucchini Stir Fry is a quick, healthy, and flavorful meal made with tender chicken, crisp zucchini, and a savory garlic sauce. It’s perfect for a busy weeknight or a simple yet satisfying dinner.


Ingredients

For the Chicken Marinade:

  • 1 lb boneless chicken thigh (cut into bite-sized pieces)
  • 1 tsp cornstarch
  • ½ cup light soy sauce
  • 1 tsp sesame oil
  • 2 tsp sugar (or honey)
  • 1 tbsp rice wine vinegar (optional)

For the Stir Fry:

 

  • 3 cloves garlic, smashed
  • 1 tbsp cooking oil
  • 1 medium zucchini (cut in half lengthwise and then sliced)
  • 1 tbsp oyster sauce
  • Ground black pepper (optional, to taste)

Instructions

  • Marinate the Chicken:
    Combine chicken, cornstarch, soy sauce, sesame oil, sugar, and rice wine vinegar in a bowl.
    Let the mixture marinate for 30 minutes.

  • Stir Fry the Chicken:
    Heat oil in a pan over medium-high heat.
    Add garlic and marinated chicken (with sauce) and stir fry until the chicken is no longer pink.
    Remove chicken from pan and set aside, leaving the sauce in the pan.

  • Cook the Zucchini:
    Add more oil if needed, then stir fry the zucchini slices for about 5 minutes until they start to soften.

  • Bring Everything Together:
    Return the chicken to the pan, add oyster sauce and black pepper, and stir fry for another 2-3 minutes until the chicken is fully cooked and zucchini is tender.

 

  • Serve and Enjoy:
    Serve hot with steamed rice or noodles for a complete meal.
