Description

Coconut Key Lime Crinkle Cookies are a delightful tropical treat that combines the zesty flavor of key limes with the sweetness of coconut, resulting in a soft and chewy cookie with a crinkled appearance.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon key lime juice
  • 1 tablespoon key lime zest
  • 1 cup sweetened shredded coconut
  • 1/2 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, vanilla extract, key lime juice, and key lime zest until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded coconut until evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Roll each dough ball in powdered sugar until fully coated, then place them back on the baking sheet.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the tops are crinkled.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a tropical twist, try adding a few chopped macadamia nuts to the dough.
  • You can substitute the key lime juice and zest with regular lime for a different flavor profile.
  • For an extra touch, drizzle melted white chocolate over the cooled cookies before serving.
