Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the diced carrots and celery to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Sprinkle the dried thyme, dried rosemary, salt, and black pepper over the vegetables. Stir to combine.
  4. Add the flour to the pot and stir well to coat the vegetables. Cook for 1-2 minutes to eliminate the raw flour taste.
  5. Gradually pour in the chicken broth while stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for about 10 minutes, allowing it to thicken slightly.
  6. Stir in the heavy cream, shredded chicken, frozen peas, frozen corn, and Worcestershire sauce. Simmer for an additional 5-7 minutes until everything is heated through.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

  • For a lighter version, substitute half-and-half for heavy cream.
