Description
A warm and comforting creamy chicken pot pie soup that brings the flavors of a classic pot pie into a delicious soup form.
Ingredients
- 3 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 cup frozen corn
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrots and celery to the pot. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Sprinkle the dried thyme, dried rosemary, salt, and black pepper over the vegetables. Stir to combine.
- Add the flour to the pot and stir well to coat the vegetables. Cook for 1-2 minutes to eliminate the raw flour taste.
- Gradually pour in the chicken broth while stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for about 10 minutes, allowing it to thicken slightly.
- Stir in the heavy cream, shredded chicken, frozen peas, frozen corn, and Worcestershire sauce. Simmer for an additional 5-7 minutes until everything is heated through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can also add diced potatoes for extra heartiness.
- Use leftover turkey instead of chicken for a festive twist.
