Instructions
1. Soak the Pineapple Rings
- In a shallow dish, combine dark rum and coconut rum.
- Add the pineapple rings, ensuring they are submerged.
- Cover and soak for at least 1 hour (or overnight for stronger flavor).
- Drain and pat dry with paper towels.
2. Prepare the Coating Station
- In one bowl, whisk together flour, salt, and baking powder.
- In another bowl, whisk eggs and coconut milk until smooth.
- Place shredded coconut in a third bowl.
3. Bread the Pineapple Rings
- Dip each pineapple ring into the flour mixture, ensuring an even coating.
- Next, dip it into the egg mixture, letting excess drip off.
- Finally, press the ring into the shredded coconut, coating it well.
