Ingredients

For the Pineapple Rings

  • 1 fresh pineapple, peeled, cored, and sliced into rings
  • ½ cup dark rum
  • ¼ cup coconut rum
  • 1 cup all-purpose flour
  • 2 large eggs
  • ¼ cup coconut milk
  • 1 ½ cups sweetened shredded coconut
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • Vegetable oil (for frying)

For the Boozy Cream Cheese Dip

  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • 2 tablespoons reserved rum from soaking
  • 1 teaspoon vanilla extract

For Garnishing

  • Powdered sugar, for dusting
  • Extra shredded coconut, toasted
  • Honey or maple syrup drizzle (optional)

Instructions

1. Soak the Pineapple Rings

  1. In a shallow dish, combine dark rum and coconut rum.
  2. Add the pineapple rings, ensuring they are submerged.
  3. Cover and soak for at least 1 hour (or overnight for stronger flavor).
  4. Drain and pat dry with paper towels.

2. Prepare the Coating Station

  1. In one bowl, whisk together flour, salt, and baking powder.
  2. In another bowl, whisk eggs and coconut milk until smooth.
  3. Place shredded coconut in a third bowl.

3. Bread the Pineapple Rings

  1. Dip each pineapple ring into the flour mixture, ensuring an even coating.
  2. Next, dip it into the egg mixture, letting excess drip off.
  3. Finally, press the ring into the shredded coconut, coating it well.
  4. Let the coated rings rest for 5 minutes to help the coating adhere.

4. Fry the Pineapple Rings

  1. Heat 1 inch of oil in a deep pan to 350°F (175°C).
  2. Fry 2–3 rings at a time, cooking for about 1 minute per side until golden brown.
  3. Remove and drain on paper towels.

5. Make the Boozy Cream Cheese Dip

  1. In a small bowl, beat cream cheese until smooth.
  2. Mix in powdered sugar, reserved rum, and vanilla extract.
  3. Adjust consistency with more rum if needed.

6. Serve & Enjoy!

  1. Dust pineapple rings with powdered sugar and sprinkle with toasted coconut.
  2. Serve with boozy cream cheese dip and a drizzle of honey or maple syrup if desired.
