Description

A decadent cheesecake featuring rich dark chocolate and fresh blackberries, perfect for dessert lovers.

Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup melted unsalted butter
  • 2 tablespoons sugar
  • 16 ounces softened cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 8 ounces dark chocolate, melted and cooled slightly
  • 1 cup fresh blackberries
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until well combined, then press this mixture into the base of a 9-inch springform pan to create an even crust.
  3. Bake for 10 minutes, then set aside to cool completely.
  4. In a separate large bowl, whip the softened cream cheese and sugar together until smooth and creamy.
  5. Add in the vanilla extract and blend well.
  6. Incorporate the eggs one at a time, mixing gently after each addition.
  7. Fold in the melted dark chocolate until uniform.
  8. In a small bowl, combine the blackberries with cornstarch and lemon juice, then carefully fold this mixture into the cheesecake batter.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 50-60 minutes, or until the center is set with a slight jiggle.
  11. Turn off the oven and leave the door ajar, allowing the cheesecake to cool gradually for about an hour.
  12. Transfer the cheesecake to room temperature, then refrigerate for a minimum of 4 hours or overnight.
