Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- 2 tablespoons sugar
- 16 ounces softened cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 ounces dark chocolate, melted and cooled slightly
- 1 cup fresh blackberries
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 325°F.
- In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until well combined, then press this mixture into the base of a 9-inch springform pan to create an even crust.
- Bake for 10 minutes, then set aside to cool completely.
- In a separate large bowl, whip the softened cream cheese and sugar together until smooth and creamy.
- Add in the vanilla extract and blend well.
- Incorporate the eggs one at a time, mixing gently after each addition.
- Fold in the melted dark chocolate until uniform.
- In a small bowl, combine the blackberries with cornstarch and lemon juice, then carefully fold this mixture into the cheesecake batter.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set with a slight jiggle.
- Turn off the oven and leave the door ajar, allowing the cheesecake to cool gradually for about an hour.
- Transfer the cheesecake to room temperature, then refrigerate for a minimum of 4 hours or overnight.
Notes
- For enhanced taste, use dark chocolate with a cocoa content of 70% or higher.
