Ingredients

  • 2 cups rhubarb, chopped into small pieces
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 (8-ounce) package cream cheese, softened
  • 1 large egg
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a medium bowl, combine the chopped rhubarb, 1/2 cup of sugar, vanilla extract, and lemon juice. Set aside.
  3. In another bowl, mix the flour, softened butter, and salt until crumbly. Press this mixture evenly into the bottom of the prepared baking pan.
  4. In a separate bowl, beat the cream cheese and remaining 1/2 cup of sugar until smooth. Add the egg, almond extract, and baking powder, mixing until well combined.
  5. Spread the cream cheese mixture over the crust in the baking pan. Evenly distribute the rhubarb mixture on top.
  6. Bake for 35-40 minutes, or until the edges are golden and the center is set. Allow to cool completely before cutting into squares.
