Delicious Rhubarb Cream Cheese Bars are a delightful dessert featuring a creamy layer of sweetened cream cheese and tart rhubarb on a buttery crust.
Ingredients
- 2 cups rhubarb, chopped into small pieces
- 1 cup granulated sugar, divided
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 (8-ounce) package cream cheese, softened
- 1 large egg
- 1/4 teaspoon almond extract
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a medium bowl, combine the chopped rhubarb, 1/2 cup of sugar, vanilla extract, and lemon juice. Set aside.
- In another bowl, mix the flour, softened butter, and salt until crumbly. Press this mixture evenly into the bottom of the prepared baking pan.
- In a separate bowl, beat the cream cheese and remaining 1/2 cup of sugar until smooth. Add the egg, almond extract, and baking powder, mixing until well combined.
- Spread the cream cheese mixture over the crust in the baking pan. Evenly distribute the rhubarb mixture on top.
- Bake for 35-40 minutes, or until the edges are golden and the center is set. Allow to cool completely before cutting into squares.
- Serve chilled or at room temperature.
Notes
- For a sweeter dessert, increase the sugar in the rhubarb mixture to 3/4 cup.
- For a twist, add 1/2 teaspoon of cinnamon to the crust for extra flavor.
