Description

This Dump and Bake Chicken Tzatziki Rice is the perfect one-pan Mediterranean-inspired meal. Tender chicken bakes over fluffy rice, surrounded by juicy tomatoes and crunchy cucumbers, and topped with a creamy homemade tzatziki sauce. It’s fresh, flavorful, and incredibly easy—just mix, dump, and bake!


Ingredients

  • 2 cups uncooked long-grain white rice

  • 4 cups chicken broth

  • 1 pound boneless, skinless chicken breasts

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

  • 1 tablespoon olive oil

  • Salt, to taste


Instructions

  • Preheat the oven to 375°F (190°C).

  • Season the chicken with garlic powder, onion powder, oregano, salt, and black pepper. Set aside.

  • In a large baking dish, combine uncooked rice and chicken broth. Stir to distribute the rice evenly.

  • In a medium bowl, make the tzatziki sauce by mixing together Greek yogurt, lemon juice, dill, olive oil, and a pinch of salt. Set aside.

  • Place seasoned chicken breasts on top of the rice mixture.

  • Scatter cherry tomatoes and diced cucumber around the chicken in the baking dish.

  • Cover tightly with foil and bake for 45 minutes.

  • Remove the foil and bake uncovered for an additional 15 minutes until the chicken is golden and the rice is cooked.

  • Let rest for 5 minutes before serving.

 

  • Serve with a generous spoonful of tzatziki sauce on top of each portion.

Notes

  • Use low-sodium chicken broth to reduce the overall sodium content.

  • Pound chicken breasts to even thickness for consistent cooking.

  • Substitute brown rice (increase broth to 4.5 cups and bake time by 10–15 minutes).

  • Add extra veggies like bell peppers or spinach for a nutrition boost.
