This Dump and Bake Chicken Tzatziki Rice is the perfect one-pan Mediterranean-inspired meal. Tender chicken bakes over fluffy rice, surrounded by juicy tomatoes and crunchy cucumbers, and topped with a creamy homemade tzatziki sauce. It’s fresh, flavorful, and incredibly easy—just mix, dump, and bake!

2 cups uncooked long-grain white rice

4 cups chicken broth

1 pound boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cherry tomatoes, halved

1 cucumber, diced
For the Tzatziki Sauce:

1 cup plain Greek yogurt

2 tablespoons fresh lemon juice

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon olive oil

Salt, to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the chicken with garlic powder, onion powder, oregano, salt, and black pepper. Set aside.

In a large baking dish, combine uncooked rice and chicken broth. Stir to distribute the rice evenly.

In a medium bowl, make the tzatziki sauce by mixing together Greek yogurt, lemon juice, dill, olive oil, and a pinch of salt. Set aside.

Place seasoned chicken breasts on top of the rice mixture.

Scatter cherry tomatoes and diced cucumber around the chicken in the baking dish.

Cover tightly with foil and bake for 45 minutes.

Remove the foil and bake uncovered for an additional 15 minutes until the chicken is golden and the rice is cooked.
