- 2 cups semisweet chocolate chips
- 1 tsp coconut oil or shortening
Instructions
- Prepare the Peanut Butter Mixture:
- In a large mixing bowl, beat peanut butter and softened butter until creamy.
- Add brown sugar, salt, and vanilla extract; mix well.
- Gradually incorporate powdered sugar, 1/2 cup at a time, until the mixture is firm yet pliable.
- Shape the Treats:
- Scoop tablespoon-sized portions of the mixture and roll into smooth balls.
- Place the balls on a parchment-lined baking sheet and freeze for 15–20 minutes.
- Melt the Chocolate:
- Combine chocolate chips and coconut oil in a microwave-safe bowl.
- Heat in 25-second intervals, stirring each time, until melted and smooth.
- Coat the Peanut Butter Balls:
- Using a toothpick, dip each ball into the melted chocolate, leaving a small portion exposed.
- Smooth out any marks left by the toothpick.
- Set the Chocolate:
- Return dipped treats to the parchment-lined sheet. Refrigerate for 10–15 minutes until the chocolate hardens.
