Seasoned with olive oil, oregano, garlic, and dill, then topped with crumbled feta, fresh parsley, and red onion, these fries bring a taste of Greece to your table. Perfect as a side, snack, or appetizer, they’re best served with tzatziki or a squeeze of lemon!
Ingredients
- 3 large Yukon Gold or Russet potatoes, cut into fries
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried dill
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
- ¼ cup diced red onion
- Lemon wedges, for serving
- Tzatziki or garlic aioli, for dipping
Instructions
- Soak the Potatoes – Place cut potatoes in a bowl of cold water for 10-15 minutes to remove excess starch. Drain and pat dry.
- Preheat the Oven – Preheat to 425°F (220°C). Line a large baking sheet with parchment paper.
- Season & Coat – Toss the fries with olive oil, oregano, dill, garlic powder, salt, pepper, and red pepper flakes until evenly coated.
- Bake to Crispy Perfection – Arrange in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- Add the Finishing Touches – Transfer to a serving plate and top with crumbled feta, parsley, and diced red onion.
- Serve & Enjoy – Serve immediately with lemon wedges and tzatziki for dipping.
Notes
- For extra crispiness – Bake at 450°F for the last 5 minutes.
- Make it vegan – Omit feta or use a plant-based cheese alternative.
- Air fryer method – Cook at 375°F for 15-20 minutes, shaking halfway.
- Storage & Reheating – Refrigerate for up to 3 days, reheat in the oven at 375°F for 10 minutes or air fryer at 350°F for 5 minutes.
