Ingredients
- 3/4 cup unsalted butter, melted and cooled to room temperature
- 1 cup light brown sugar
- 1/4 cup granulated sugar
- 2 large eggs (room temperature)
- 2 cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1 tablespoon instant coffee powder, ground fine
- 1 cup semi-sweet or dark chocolate chips
- 1 teaspoon vanilla extract
Instructions
- Prepare the Dry Ingredients:
- In a medium bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon (if using).
- Grind the instant coffee powder into a fine consistency and mix it into the dry ingredients.
- Prepare the Wet Ingredients:
- In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, vanilla extract, and eggs until smooth and creamy.
- Combine and Rest the Dough:
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Stir in the chocolate chips.
- Let the dough rest for 10–15 minutes.
- Shape the Dough:
- Line a baking sheet with parchment paper.
- Use a cookie scoop to portion the dough into balls and place them on the sheet. Leave space between each ball for spreading.
- Press a few extra chocolate chips on top for a bakery-style look.
- Bake the Cookies:
- Preheat the oven to 350°F (175°C).
