Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper (optional, for extra heat)
1 cup buttermilk
1/4 cup canola oil
2 large eggs
1 cup sharp cheddar cheese, grated
1/2 cup fresh jalapeños, finely chopped
2 tablespoons agave syrup or honey (optional, for a slight sweetness)
Instructions
Preheat the Oven: Set your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, sea salt, and cayenne pepper.
Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, canola oil, eggs, and agave syrup (if using) until well combined.
Fold in Cheese and Jalapeños: Gradually add the wet ingredients to the dry ingredients and mix until just combined. Fold in the grated cheddar cheese and chopped jalapeños.
Fill the Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake: Place in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.
Notes
Adjust the Spice Level: For a milder muffin, remove the seeds from the jalapeños before chopping them.
Cheese Variations: Try swapping cheddar for pepper jack or a blend of different cheeses for a unique flavor.
Make Ahead: These muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 2 months.
Serving Suggestions: Pair with chili, barbecue dishes, or scrambled eggs for a hearty meal.
