Description

A delicious and refreshing Key Lime Cheesecake with a creamy filling and a crunchy graham cracker crust.

Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup granulated sugar
  • ½ cup melted unsalted butter
  • 24 ounces softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup plain yogurt
  • ½ cup fresh or bottled key lime juice
  • 1 tablespoon grated key lime peel
  • 1 teaspoon vanilla essence
  • 1 cup heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla essence
  • Optional: Lime wedges and zest for decoration

Instructions

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, blend the crushed graham crackers, sugar, and melted butter until it resembles wet sand.
  3. Press the mixture into the base of a 9-inch springform pan to create a solid crust.
  4. Bake the crust in the oven for 10 minutes, then allow it to cool completely.
  5. In another large bowl, whip the softened cream cheese until fluffy and smooth using an electric mixer.
  6. Gradually incorporate the sugar, mixing until fully combined.
  7. Add the eggs one at a time, ensuring each is well blended before adding the next.
  8. Fold in the yogurt, key lime juice, lime zest, and vanilla essence until smooth.
  9. Pour the creamy filling over the cooled crust in the springform pan.
  10. Bake the cheesecake for 50-60 minutes, watching for the center to be set with a slight jiggle.
  11. Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
  12. Transfer the cheesecake to the refrigerator and chill for a minimum of 4 hours, or ideally overnight.
  13. When ready to serve, whip the heavy cream with confectioners’ sugar and vanilla essence until soft peaks form.
  14. Spread or pipe the whipped cream over the cheesecake and garnish with lime wedges and zest if desired.

Notes

  • For best results, chill the cheesecake overnight.
  • Use fresh key limes for the best flavor.
  • Ensure the cream cheese is softened for easy mixing.
