Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup granulated sugar
- ½ cup melted unsalted butter
- 24 ounces softened cream cheese
- 1 cup granulated sugar
- 3 large eggs
- ½ cup plain yogurt
- ½ cup fresh or bottled key lime juice
- 1 tablespoon grated key lime peel
- 1 teaspoon vanilla essence
- 1 cup heavy cream
- 2 tablespoons confectioners’ sugar
- 1 teaspoon vanilla essence
- Optional: Lime wedges and zest for decoration
Instructions
- Preheat your oven to 325°F.
- In a mixing bowl, blend the crushed graham crackers, sugar, and melted butter until it resembles wet sand.
- Press the mixture into the base of a 9-inch springform pan to create a solid crust.
- Bake the crust in the oven for 10 minutes, then allow it to cool completely.
- In another large bowl, whip the softened cream cheese until fluffy and smooth using an electric mixer.
- Gradually incorporate the sugar, mixing until fully combined.
- Add the eggs one at a time, ensuring each is well blended before adding the next.
- Fold in the yogurt, key lime juice, lime zest, and vanilla essence until smooth.
- Pour the creamy filling over the cooled crust in the springform pan.
- Bake the cheesecake for 50-60 minutes, watching for the center to be set with a slight jiggle.
- Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
- Transfer the cheesecake to the refrigerator and chill for a minimum of 4 hours, or ideally overnight.
- When ready to serve, whip the heavy cream with confectioners’ sugar and vanilla essence until soft peaks form.
- Spread or pipe the whipped cream over the cheesecake and garnish with lime wedges and zest if desired.
