Ingredients

  • For the Chicken:
    • 4 boneless, skinless chicken breasts (about 6 ounces each)
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Parmesan Crust:
    • 1/2 cup panko breadcrumbs
    • 1/3 cup grated Parmesan cheese
    • 1/3 cup shredded mozzarella cheese
    • 2 tablespoons unsalted butter, melted
    • 1 tablespoon mayonnaise
    • 1 teaspoon dried parsley
    • 1/2 teaspoon garlic powder
  • Optional Garnish:
    • Fresh parsley, chopped (to taste)
    • Lemon wedges (for serving)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly with oil.
  • Season the Chicken: Pat the chicken breasts dry and brush with olive oil. Season both sides with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • Sear the Chicken: Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear each chicken breast for 2-3 minutes on both sides until golden brown. Transfer the chicken to the prepared baking sheet.
  • Prepare the Parmesan Crust: In a bowl, combine the panko breadcrumbs, Parmesan, mozzarella, melted butter, mayonnaise, parsley, and garlic powder. Stir until the mixture is crumbly.
  • Add the Parmesan Crust and Bake: Spoon the Parmesan mixture onto each chicken breast. Press lightly to adhere. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish and Serve: Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and serve with lemon wedges for a fresh finish.

Notes

  • Searing the chicken helps lock in moisture and adds flavor.
  • Use freshly grated cheese for the best texture in the crust.
  • Rest the chicken after baking to keep it juicy.
