Description

Lucky Charms Cookies are a fun, colorful, and chewy dessert that combines a soft sugar cookie base with bursts of sweet, crunchy Lucky Charms marshmallows. Perfect for St. Patrick’s Day, birthday parties, or a magical baking day at home, these cookies are as eye-catching as they are delicious!


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon coarse salt
  • 3/4 cup sugar
  • 1/2 cup vegan butter (or unsalted butter)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Lucky Charms marshmallows (+ extra for garnish)

Instructions

  1. Preheat & Prepare – Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients – In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  3. Cream Butter & Sugar – In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
  4. Combine & Fold – Gradually add the dry ingredients into the wet mixture, stirring until just combined. Gently fold in the Lucky Charms marshmallows.
  5. Shape & Bake – Scoop dough onto the prepared baking sheet, spacing evenly. Bake for 10-12 minutes, or until the edges are just set.
  6. Decorate & Cool – While still warm, press extra Lucky Charms marshmallows on top. Let cookies cool on a wire rack before serving.

Notes

  • Add 1/4 cup rainbow sprinkles for extra fun colors.
  • Swap vegan butter for regular butter if preferred.
  • Store in an airtight container for up to 5 days for maximum freshness.
