Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon coarse salt
- 3/4 cup sugar
- 1/2 cup vegan butter (or unsalted butter)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup Lucky Charms marshmallows (+ extra for garnish)
Instructions
- Preheat & Prepare – Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients – In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Cream Butter & Sugar – In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing until smooth.
- Combine & Fold – Gradually add the dry ingredients into the wet mixture, stirring until just combined. Gently fold in the Lucky Charms marshmallows.
- Shape & Bake – Scoop dough onto the prepared baking sheet, spacing evenly. Bake for 10-12 minutes, or until the edges are just set.
- Decorate & Cool – While still warm, press extra Lucky Charms marshmallows on top. Let cookies cool on a wire rack before serving.
Notes
- Add 1/4 cup rainbow sprinkles for extra fun colors.
- Swap vegan butter for regular butter if preferred.
- Store in an airtight container for up to 5 days for maximum freshness.
