Ingredients
- ½ cup butter, softened
- ¾ cup granulated sugar
- 1 egg
- ¾ tbsp mint extract
- 3–4 drops green food coloring
- 1½ cups all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tsp cream of tartar
- ¼ tsp salt
- 1 cup mint chocolate chips
- 1½ cups Lucky Charms marshmallows
Instructions
Preheat & Prep:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
Cream the Butter & Sugar:
- In a large bowl, beat together butter and sugar until fluffy.
- Add the egg, mint extract, and food coloring, mixing until fully incorporated.
Mix the Dry Ingredients:
- In a separate bowl, whisk together flour, baking soda, baking powder, cream of tartar, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until combined.
Fold in the Fun:
- Gently fold in mint chocolate chips and Lucky Charms marshmallows, being careful not to overmix.
Shape & Bake:
- Roll the dough into small balls and place them on the prepared baking sheet.
- Bake for 10 minutes, or until the edges are lightly golden and the centers are soft.
Cool & Enjoy:
- Let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
