Description

Peach Cobbler Cheesecake Fruit Salad is a delightful and refreshing dessert that combines fresh fruits with a creamy cheesecake mixture, topped with granola for added crunch.

Ingredients

  • 2 cups fresh peaches, diced (about 4 medium peaches)
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup heavy cream
  • 1/4 cup granola (for topping)

Instructions

  1. In a large mixing bowl, combine the diced peaches, strawberries, blueberries, and raspberries. Gently toss the fruit to mix.
  2. In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, vanilla extract, and ground cinnamon, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Pour the cream cheese mixture over the fruit and gently fold to combine, being careful not to mash the fruit.
  5. Chill the fruit salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve the fruit salad in individual bowls and sprinkle granola on top just before serving for added crunch.

Notes

  • For a tropical twist, add diced pineapple or mango to the fruit mix.
  • For a lighter version, substitute Greek yogurt for the cream cheese and reduce the powdered sugar to taste.
