Ingredients
- 2 cups fresh peaches, diced (about 4 medium peaches)
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup heavy cream
- 1/4 cup granola (for topping)
Instructions
- In a large mixing bowl, combine the diced peaches, strawberries, blueberries, and raspberries. Gently toss the fruit to mix.
- In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, vanilla extract, and ground cinnamon, mixing until well combined.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Pour the cream cheese mixture over the fruit and gently fold to combine, being careful not to mash the fruit.
- Chill the fruit salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve the fruit salad in individual bowls and sprinkle granola on top just before serving for added crunch.
Notes
- For a tropical twist, add diced pineapple or mango to the fruit mix.
- For a lighter version, substitute Greek yogurt for the cream cheese and reduce the powdered sugar to taste.
