Ingredients
- 2 cups vanilla ice cream
- 1 cup coconut milk
- 1 cup pineapple juice
- 1/2 cup crushed pineapple, drained
- 1/4 cup sweetened shredded coconut
- 1 teaspoon vanilla extract
- Whipped cream, for topping
- Maraschino cherries, for garnish
Instructions
- In a blender, combine the vanilla ice cream, coconut milk, pineapple juice, crushed pineapple, shredded coconut, and vanilla extract.
- Blend on high speed until smooth and creamy, about 30-60 seconds.
- Taste the mixture and adjust sweetness if desired by adding more pineapple juice or a little sugar.
