Description
Savory dumplings filled with a delightful mixture of red kuri squash and goat cheese, perfect for a unique fusion dish.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup water (adjust as needed)
- 1 cup cooked and mashed red kuri squash
- 4 ounces goat cheese, crumbled
- 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup plain yogurt (for serving)
- 1 tablespoon fresh lemon juice (for serving)
- Chopped fresh parsley (for garnish)
Instructions
- Begin by mixing the flour and salt in a mixing bowl. Gradually pour in the water while stirring until a dough begins to form. Transfer the mixture to a floured surface and knead for about 5 minutes until the dough is elastic and smooth. Cover it with a damp cloth and allow it to rest for 30 minutes.
- In another bowl, combine the mashed red kuri squash with the crumbled goat cheese, thyme, garlic powder, and black pepper. Stir until the ingredients are evenly mixed.
- After the dough has rested, roll it out on a floured surface until it reaches a thickness of approximately 1/8 inch. Use a round cutter to create circles of dough, about 3 inches in diameter.
- Spoon approximately 1 tablespoon of the squash and cheese mixture onto the center of each circle. Fold the dough over to form a half-moon shape, ensuring to pinch the edges securely to prevent any filling from escaping.
- Bring a large pot of water to a rolling boil. Carefully drop the dumplings into the water in batches, cooking them for 5-7 minutes or until they rise to the surface and become tender.
- Using a slotted spoon, transfer the dumplings to a serving dish. Drizzle them with olive oil and sprinkle with chopped parsley for a fresh touch.
- In a small bowl, whisk together the yogurt and lemon juice. Serve this tangy dip alongside the dumplings for a delightful contrast.
Notes
- For an extra kick, consider adding a dash of red pepper flakes to the filling for a spicy twist.
- Feel free to swap out the red kuri squash with butternut squash or pumpkin for a unique flavor experience.
