Ingredients
- 2 cups shredded carrots
- 1 cup diced apples (about 2 medium apples)
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts (optional)
- 1/4 cup raisins (optional)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded carrots, diced apples, dried cranberries, walnuts, and raisins. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss until all the ingredients are well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish or light lunch.
Notes
- For added crunch, consider substituting sunflower seeds for walnuts or adding sliced celery.
- To make it vegan, replace the Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
