Ingredients

  • 2 cups fresh rhubarb, chopped into small pieces
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a medium bowl, combine the chopped rhubarb, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well to coat the rhubarb with the dry ingredients.
  2. In another bowl, whisk together the egg, milk, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
  4. Heat about 2 inches of oil in a deep skillet or pot over medium heat until it reaches 350°F.
  5. Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, making sure not to overcrowd the pan.
  6. Cook for about 2-3 minutes on each side, or until golden brown. Remove fritters with a slotted spoon and drain on paper towels.
