A delicious recipe for rolled up chicken breasts stuffed with a creamy spinach and cheese filling.
Ingredients
- 2 large boneless, skinless chicken breasts (approximately 1 pound)
- 1 cup fresh spinach, finely chopped
- 1/2 cup cream cheese, softened to room temperature
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (optional)
- Chopped fresh parsley for garnish (optional)
Instructions
- Begin by preheating your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and black pepper. Stir until the mixture is creamy and well blended.
- Place the chicken breasts between two sheets of parchment paper and gently pound them to an even thickness of about 1/2 inch.
- Evenly distribute the creamy spinach mixture over each chicken breast, ensuring to cover the surface.
- Carefully roll each chicken breast from one end to the other, making sure to keep the filling inside. Secure the rolls with toothpicks if necessary.
- If desired, spread breadcrumbs on a plate and coat each chicken roll in the breadcrumbs for added crunch.
- In a skillet, heat the olive oil over medium heat and sear the chicken rolls until they are golden brown on all sides, approximately 3-4 minutes per side.
- Once seared, place the chicken rolls in the prepared baking dish and bake in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- After baking, allow the chicken rolls to rest for about 5 minutes before slicing. Garnish with chopped parsley if you like.
Notes
- For an extra kick, mix in 1/4 teaspoon of red pepper flakes with the cheese filling.
- Feel free to swap out spinach for other greens such as kale or arugula, or add sun-dried tomatoes for a burst of flavor.
