Description

A delicious recipe for rolled up chicken breasts stuffed with a creamy spinach and cheese filling.


Ingredients

  • 2 large boneless, skinless chicken breasts (approximately 1 pound)
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup cream cheese, softened to room temperature
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Begin by preheating your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or cooking spray.
  2. In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and black pepper. Stir until the mixture is creamy and well blended.
  3. Place the chicken breasts between two sheets of parchment paper and gently pound them to an even thickness of about 1/2 inch.
  4. Evenly distribute the creamy spinach mixture over each chicken breast, ensuring to cover the surface.
  5. Carefully roll each chicken breast from one end to the other, making sure to keep the filling inside. Secure the rolls with toothpicks if necessary.
  6. If desired, spread breadcrumbs on a plate and coat each chicken roll in the breadcrumbs for added crunch.
  7. In a skillet, heat the olive oil over medium heat and sear the chicken rolls until they are golden brown on all sides, approximately 3-4 minutes per side.
  8. Once seared, place the chicken rolls in the prepared baking dish and bake in the oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  9. After baking, allow the chicken rolls to rest for about 5 minutes before slicing. Garnish with chopped parsley if you like.

Notes

  • For an extra kick, mix in 1/4 teaspoon of red pepper flakes with the cheese filling.
  • Feel free to swap out spinach for other greens such as kale or arugula, or add sun-dried tomatoes for a burst of flavor.
