Description

Sausage rolls with hot honey combine the best of both worlds: savory sausage encased in golden, flaky puff pastry, all topped with a drizzle of spicy-sweet hot honey. Perfect for appetizers, brunch, or game-day snacks, these rolls are as versatile as they are delicious. This recipe adds a gourmet twist to a classic favorite, making it a crowd-pleaser for any occasion.

Ingredients

  • Pork and sage sausage meat (1 pound)
  • Sharp cheddar cheese (½ cup, freshly grated)
  • Panko breadcrumbs (½ cup)
  • Large eggs (2, divided)
  • Dijon mustard (2 tablespoons)
  • Fresh thyme leaves (1 tablespoon, plus garnish)
  • Puff pastry (2 sheets, thawed)
  • Everything bagel seasoning (2 tablespoons)
  • Hot honey (for drizzling)

Instructions

. Preheat the Oven and Prep the Baking Sheet:

  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.

2. Prepare the Sausage Filling:

  • In a large mixing bowl, combine sausage meat, grated cheddar, panko breadcrumbs, one egg, and chopped thyme.
  • Mix thoroughly until all ingredients are evenly combined.

3. Roll Out the Puff Pastry:

  • Lightly flour your work surface.
  • Roll out each sheet of puff pastry to smooth the surface, then cut each sheet into two long strips, creating four strips in total.

4. Assemble the Sausage Rolls:

  • Divide the sausage mixture into four equal portions and shape each into a long rope.
  • Place a sausage rope in the center of each puff pastry strip.
  • Spread a thin layer of Dijon mustard along one edge of the pastry. Brush the opposite edge with egg wash.
  • Roll the pastry tightly around the sausage, sealing the seam underneath.

5. Slice and Decorate:

  • Cut each roll into 1½-inch pieces and place seam-side down on the prepared baking sheet.
  • Lightly brush the tops with egg wash and sprinkle generously with everything bagel seasoning.

6. Bake:

  • Bake in the preheated oven for 18–20 minutes, rotating the baking sheet halfway through for even browning.
  • Remove from the oven when the pastry is puffed and golden brown.

7. Finish with Hot Honey:

  • Let the sausage rolls cool for a few minutes, then drizzle with hot honey and garnish with fresh thyme leaves.
  • Serve warm for the best flavor and texture.

Notes

  • Chilled Pastry: Keep puff pastry cold while working to ensure flaky results.
  • Avoid Overfilling: Use just enough filling to avoid tearing the pastry.
  • Customize Seasonings: Adjust thyme and mustard levels to suit your taste.
