Instructions
1. Prepare the Oreo Crust
- Crush the mint Oreos using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.
- Mix the crushed Oreos with melted butter until evenly combined.
- Press the mixture firmly into the bottom of a 9×13-inch baking dish.
- Refrigerate for 10-15 minutes to set.
2. Make the Cream Cheese Layer
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Fold in 1 cup of Cool Whip until combined.
- Spread evenly over the Oreo crust.
3. Make the Mint Pudding Layer
- In a separate bowl, whisk together cheesecake pudding mix, milk, mint extract, and green food coloring until smooth.
- Let the pudding sit for 5 minutes to thicken.
- Gently spread over the cream cheese layer.
4. Top & Chill
- Spread the remaining Cool Whip evenly over the pudding layer.
- Sprinkle with crushed Oreos, chocolate shavings, and green sprinkles for a festive touch.
- Cover and refrigerate for at least 4-6 hours (or overnight for the best texture).
