For the Cream Cheese Layer

  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup Cool Whip (or homemade whipped cream)

For the Mint Pudding Layer

  • 1 (3.4-ounce) package instant cheesecake or vanilla pudding mix
  • 2 cups cold milk
  • 1 teaspoon mint extract
  • 56 drops green food coloring

For the Topping

  • 2 cups Cool Whip (or homemade whipped cream)
  • Extra crushed Oreos
  • Chocolate shavings (optional)
  • Green sprinkles (optional)
  • Maraschino cherries (optional)

Instructions

1. Prepare the Oreo Crust

  1. Crush the mint Oreos using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.
  2. Mix the crushed Oreos with melted butter until evenly combined.
  3. Press the mixture firmly into the bottom of a 9×13-inch baking dish.
  4. Refrigerate for 10-15 minutes to set.

2. Make the Cream Cheese Layer

  1. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Fold in 1 cup of Cool Whip until combined.
  3. Spread evenly over the Oreo crust.

3. Make the Mint Pudding Layer

  1. In a separate bowl, whisk together cheesecake pudding mix, milk, mint extract, and green food coloring until smooth.
  2. Let the pudding sit for 5 minutes to thicken.
  3. Gently spread over the cream cheese layer.

4. Top & Chill

  1. Spread the remaining Cool Whip evenly over the pudding layer.
  2. Sprinkle with crushed Oreos, chocolate shavings, and green sprinkles for a festive touch.
  3. Cover and refrigerate for at least 4-6 hours (or overnight for the best texture).

5. Serve & Enjoy!

  1. Garnish with maraschino cherries or a drizzle of chocolate syrup before serving.
  2. Slice into squares and enjoy the ultimate minty-chocolate dessert!
