Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1/4 cup soy sauce (low-sodium preferred)
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
Marinate the Chicken
In a large bowl, whisk together soy sauce, honey, rice vinegar, garlic, ginger, sesame oil, and black pepper. Add chicken thighs and toss to coat. Cover and marinate in the fridge for at least 30 minutes, up to 2 hours.Prep the Sauce
Reserve 2–3 tablespoons of the marinade in a separate bowl for glazing. Discard any marinade that touched raw chicken.Bake the Chicken
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place chicken thighs skin-side up on the sheet. Pour any remaining marinade over them. Bake for 35–40 minutes or until the internal temp reaches 165°F (75°C).
Finish and Garnish
Let the chicken rest for 5 minutes. Drizzle reserved glaze over the top. Garnish with sliced green onions and sesame seeds. Serve hot and enjoy!
