Ingredients

For the Shrimp:

  • 1 pound large raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt, to taste

For the Creamed Corn:

  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 ears of fresh corn, kernels removed (or 1½ cups canned corn, drained)
  • 1 teaspoon smoked paprika
  • ½ cup half-and-half (or heavy cream)
  • 3 ounces feta cheese, crumbled
  • Fresh cilantro, chopped (for garnish)
  • Fresh lime slices (for garnish)

Instructions

  1. Sauté the Shrimp
    • In a medium bowl, toss the shrimp with chili powder and a pinch of salt until evenly coated.
    • Heat the olive oil in a large skillet over medium heat. Add the seasoned shrimp in a single layer and cook for 2 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Prepare the Creamed Corn
    • In the same skillet, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 4 minutes.
    • Add the minced garlic and cook for an additional minute.
    • Stir in the corn kernels and smoked paprika. Cook for 3-4 minutes, allowing the corn to slightly caramelize.
    • Pour in the half-and-half, bringing the mixture to a gentle simmer. Stir in the crumbled feta cheese until the sauce becomes creamy and the cheese has melted.
  3. Combine and Serve
    • Return the cooked shrimp to the skillet, stirring to combine with the creamed corn. Cook for an additional 2 minutes to warm through.
    • Garnish with chopped fresh cilantro and lime slices. Serve immediately.

Notes

  • Use fresh, high-quality shrimp for the best flavor.
  • Allow the corn to caramelize slightly to enhance its natural sweetness.
  • Adjust spice levels by increasing or decreasing the chili powder.
  • Store leftovers in an airtight container for up to 2 days and reheat gently to preserve texture.
