Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell pepper, diced (any color)
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice or crusty bread for serving

Instructions

  1. In a large bowl, toss the shrimp with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Let marinate for 15 minutes.
  2. Heat a large skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes until they turn pink. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the garlic, onion, and bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
  4. Stir in the diced tomatoes, chicken broth, Worcestershire sauce, and lemon juice. Bring to a simmer and let cook for 5 minutes.
  5. Return the shrimp to the skillet and cook for an additional 2-3 minutes until heated through. Adjust seasoning with salt and pepper if needed.
  6. Serve hot over cooked rice or with crusty bread, garnished with chopped green onions.

  • For a milder version, reduce or omit the cayenne pepper.
