Ingredients

  • 6 large eggs
  • ¼ cup whole milk
  • ¼ cup half-and-half
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (plus more for garnish)
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1½ cups Gruyère cheese, shredded

Instructions

  • Preheat the Oven
    • Preheat your oven to 375°F (190°C).
    • Grease a 9-inch pie pan with cooking spray and set it aside.
  • Cook the Vegetables
    • Heat olive oil in a large nonstick skillet over medium-high heat. Swirl to coat the pan evenly.
    • Add mushrooms and cook, stirring occasionally, for about 8 minutes until browned and tender.
    • Add onion and garlic, stirring and cooking for 5 minutes until softened.
    • Toss in the spinach and cook for 1–2 minutes until wilted. Remove from heat and let cool slightly.
  • Prepare the Egg Mixture
    • In a medium bowl, whisk together eggs, milk, half-and-half, Dijon mustard, thyme, salt, and pepper until well combined.
    • Fold in the sautéed vegetables and shredded Gruyère cheese.
  • Assemble the Quiche
    • Pour the egg mixture into the prepared pie pan, spreading it evenly.
    • Bake for 30 minutes, or until the quiche is set and golden brown on top.
  • Cool and Serve
    • Allow the quiche to cool for 10 minutes before slicing.
    • Garnish with fresh thyme and serve warm.
