Ingredients
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
½ teaspoon almond extract (optional)
2 cups + 2 tablespoons (280g) all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 package (3 oz) strawberry-flavored gelatin mix
¼ cup powdered sugar, for dusting
24–30 chocolate kiss candies, unwrapped
Instructions
Prepare the Dough: In a large bowl, cream together butter and sugar until light and fluffy. Mix in the egg, vanilla extract, almond extract, and strawberry gelatin until well combined.
Add Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until a soft dough forms.
Chill the Dough: Cover and refrigerate for at least 1 hour to prevent spreading.
Preheat & Shape: Preheat oven to 350°F (175°C). Roll dough into small balls and place them on a parchment-lined baking sheet.
Bake: Bake for 11-13 minutes or until edges are set but centers remain soft.
Add the Chocolate Kiss: Let cookies cool slightly before gently pressing a chocolate kiss into the center of each cookie.
Final Touch: Once fully cooled, dust cookies with powdered sugar for a festive look.
