Ingredients
- 2¼ cups all-purpose flour
- 6 tablespoons sugar

- ¼ cup milk
- 4½ cups fresh strawberries (sliced)

- 2 tablespoons sugar (for whipped cream)
- ½ teaspoon vanilla extract
Instructions
- Prepare the Shortcake Dough
- Preheat oven to 400°F (200°C).
- Line a 15x10x1-inch baking pan with parchment paper.
- In a medium bowl, mix flour, 6 tablespoons of sugar, baking powder, salt, and baking soda.
- Cut in cold butter using a pastry blender until the mixture resembles coarse crumbs.
- In a small bowl, combine eggs, sour cream, and milk. Add to the flour mixture and stir until just moistened.
- Bake the Shortcake
- Spread the dough evenly in the prepared pan using a small offset spatula.
- Bake for 16–18 minutes or until a toothpick inserted in the center comes out clean.
- Cool completely in the pan on a wire rack.
- Prepare the Strawberries
- Combine 4 cups of sliced strawberries with 3 tablespoons of sugar in a bowl.
- Optionally, lightly mash the strawberries for a juicy mixture. Set aside.
- Make Sweetened Whipped Cream
- In a chilled mixing bowl, combine whipping cream, 2 tablespoons of sugar, and vanilla extract.
- Beat with an electric mixer on medium speed until soft peaks form.
- Assemble the Parfaits
- Using a 2-inch round cutter, cut 12 shortcake pieces from the baked sheet.
- In six 8-ounce jars or glasses, layer:
- One shortcake piece
- ½ cup strawberry mixture
- ⅓ cup whipped cream
- Repeat layers and finish with additional sliced strawberries on top.
