Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together honey, soy sauce, apple cider vinegar, olive oil, Dijon mustard, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let excess marinade drip off. Discard the remaining marinade.
  5. Place the chicken thighs skin-side down on the grill. Cook for about 6-7 minutes, then flip and cook for an additional 6-7 minutes, or until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving.

Notes

  • For a smoky flavor, add a few wood chips to the grill while cooking.
  • For a sweeter glaze, brush additional honey on the chicken during the last few minutes of grilling.
