Ingredients
- Large jalapeños: 12
- Cream cheese (softened): 8 ounces
- Cheddar cheese (shredded): 4 ounces
- Leftover beef brisket (finely chopped): 2 cups
- Chili powder: ½ tablespoon
- Bacon: 12 slices
- BBQ sauce: ¼ cup
Instructions
- Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with a wire rack and spray it with nonstick spray. - Prepare the Jalapeños:
Slice the tops off the jalapeños and remove the seeds and membranes using a small spoon or jalapeño corer. Wear gloves to protect your hands from spicy oils. - Make the Filling:
In a bowl, combine softened cream cheese, shredded cheddar, finely chopped brisket, and chili powder. Mix until fully combined. - Stuff the Jalapeños:
Transfer the filling to a ziplock bag and cut off one corner to create a piping bag. Pipe the mixture into each hollowed jalapeño, filling them generously. - Wrap with Bacon:
Wrap each stuffed jalapeño with a slice of bacon, ensuring the filling is secure. Use toothpicks if needed to hold the bacon in place. - Bake the Jalapeños:
Place the wrapped jalapeños seam-side down on the prepared rack. Bake for 10 minutes, then flip them over and bake for another 10 minutes, or until the bacon is crispy. - Brush with BBQ Sauce:
Remove the jalapeños from the oven and brush them generously with BBQ sauce. - Broil for a Perfect Finish:
Turn your oven’s broiler to low. Broil the jalapeños for 2 minutes, keeping a close eye to ensure the bacon doesn’t burn. - Cool and Serve:
