Ingredients
- 3 Tbsp unsalted butter
- 2 Tbsp extra-virgin olive oil
- 1 medium onion, finely chopped
- 4 garlic cloves, thinly sliced
- 1 lb ground chicken (dark meat)
- 1½ tsp kosher salt
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp ground coriander
- Freshly ground pepper, to taste
- 2 (4-oz.) cans diced green chiles
- 2 (15.5-oz.) cans white beans, rinsed
- 3 cups low-sodium chicken broth
- Toppings: avocado, sour cream, cilantro, jalapeños, lime wedges, corn chips (optional)
Instructions
- Prepare the Base: In a large Dutch oven or heavy pot, melt butter and olive oil over medium-high heat. Add chopped onion and garlic, cooking until softened and fragrant (4-6 minutes).
- Cook the Chicken: Add ground chicken, salt, chili powder, cumin, coriander, and pepper. Cook, breaking apart the chicken with a spoon until fully browned (3-4 minutes).
- Add Green Chiles: Stir in the diced green chiles and cook for another 2-3 minutes, allowing the flavors to meld.
- Create the Chili: Add white beans and chicken broth to the pot. Bring to a boil, then lower the heat to simmer. Let it cook for 8-10 minutes, mashing some beans against the side of the pot to thicken the chili slightly.
- Serve: Ladle the chili into bowls, topping each serving with desired garnishes like avocado, sour cream, cilantro, jalapeños, or corn chips. Serve with lime wedges for a zesty finish.
Notes
- Use Dark Meat Chicken: It stays juicier and adds more flavor to the chili.
- Mash the Beans: For a naturally creamy texture without needing extra cream.
- Customize the Heat: Adjust the number of green chiles or add diced jalapeños for extra spice.
- Toppings Galore: Experiment with shredded cheese, pickled onions, or crispy tortilla strips.
- Make Ahead: This chili gets better the next day as the flavors meld.
