Ingredients
2 cups fresh broccoli florets, chopped
1 cup grated carrots
1/2 cup finely diced red onion
1/2 cup dried cranberries
1/2 cup pumpkin seeds
1/2 cup crispy bacon bits (optional)
1/2 cup Greek yogurt
2 tablespoons white wine vinegar
2 tablespoons maple syrup
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
Instructions
Prepare the Broccoli: Wash the fresh broccoli florets under cold water, pat them dry, and chop into bite-sized pieces.
Chop and Grate: Grate the carrots and finely dice the red onion. If you want a milder onion flavor, soak the diced onion in cold water for a few minutes before adding to the salad.
Make the Dressing: In a small bowl, whisk together Greek yogurt, white wine vinegar, maple syrup, garlic powder, and black pepper until smooth and creamy.
Combine Ingredients: In a large mixing bowl, add the chopped broccoli, grated carrots, diced red onion, dried cranberries, pumpkin seeds, and crispy bacon bits (if using).
Mix the Salad: Drizzle the dressing over the ingredients and toss gently until everything is well-coated.
Chill and Serve: Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled or at room temperature.
Notes
For extra crunch, add the pumpkin seeds and bacon bits just before serving.
You can lightly steam the broccoli for 2-3 minutes if you prefer a softer texture.
