Ingredients
- 2 cups shredded cooked chicken
- 1/2 cup spicy wing sauce
- 1 tablespoon extra virgin olive oil
- 1 medium onion, sliced thin
- 1 medium green bell pepper, sliced thin
- 1 cup shredded mozzarella cheese
- 4 sub rolls
- Salt and black pepper to taste
- Chopped cilantro (for garnish)
Instructions
- In a mixing bowl, toss the shredded chicken with the spicy wing sauce until well coated. Set this mixture aside to let the flavors meld.
- In a large frying pan, heat the olive oil over medium heat. Add the sliced onion and green bell pepper, cooking for about 5-7 minutes until they soften and begin to caramelize. Season with salt and black pepper as desired.
- Stir in the buffalo chicken mixture into the skillet with the sautéed vegetables. Cook for another 3-5 minutes, stirring occasionally, until everything is heated through.
- Preheat your oven’s broiler.
- Cut the sub rolls lengthwise and arrange them on a baking sheet. Evenly distribute the spicy chicken mixture into each roll, then sprinkle the shredded mozzarella cheese on top.
- Place the baking sheet under the broiler for 2-3 minutes, watching closely until the cheese is melted and bubbly.
- Take the hoagies out of the oven and sprinkle with chopped cilantro before serving.
