Description

A deliciously moist and fluffy peanut butter banana bread that is perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas, thoroughly mashed
  • 1/2 cup smooth peanut butter
  • 1/3 cup canola oil
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped pecans or dark chocolate chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the mashed bananas, peanut butter, canola oil, white sugar, brown sugar, eggs, and vanilla extract until the mixture is smooth and creamy.
  3. In another bowl, combine the baking soda, sea salt, and flour, whisking them together until well blended.
  4. Gradually incorporate the dry ingredients into the banana mixture, stirring gently until just combined to maintain a light texture.
  5. If you choose, fold in the chopped pecans or dark chocolate chunks for an extra layer of flavor and crunch.
  6. Transfer the batter into the prepared loaf pan, smoothing the top with a spatula to create an even surface.
  7. Bake in the oven for 50-60 minutes, checking for doneness by inserting a toothpick into the center; it should come out clean when the loaf is ready.
  8. Let the loaf cool in the pan for about 10 minutes, then carefully move it to a wire rack to cool completely before slicing.

Notes

  • For a spiced twist, consider adding 1 teaspoon of ground cinnamon to the flour mixture.
  • For a healthier alternative, swap half of the all-purpose flour with whole wheat flour to increase fiber content.
