Description
A deliciously moist and fluffy peanut butter banana bread that is perfect for breakfast or a snack.
Ingredients
- 2 ripe bananas, thoroughly mashed
- 1/2 cup smooth peanut butter
- 1/3 cup canola oil
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped pecans or dark chocolate chunks (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- In a large bowl, mix together the mashed bananas, peanut butter, canola oil, white sugar, brown sugar, eggs, and vanilla extract until the mixture is smooth and creamy.
- In another bowl, combine the baking soda, sea salt, and flour, whisking them together until well blended.
- Gradually incorporate the dry ingredients into the banana mixture, stirring gently until just combined to maintain a light texture.
- If you choose, fold in the chopped pecans or dark chocolate chunks for an extra layer of flavor and crunch.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula to create an even surface.
- Bake in the oven for 50-60 minutes, checking for doneness by inserting a toothpick into the center; it should come out clean when the loaf is ready.
- Let the loaf cool in the pan for about 10 minutes, then carefully move it to a wire rack to cool completely before slicing.
Notes
- For a spiced twist, consider adding 1 teaspoon of ground cinnamon to the flour mixture.
- For a healthier alternative, swap half of the all-purpose flour with whole wheat flour to increase fiber content.
