Ingredients

  • 1 teaspoon vanilla extract

Instructions

  • Preheat the Oven: Set your oven to 320°F (160°C) with a fan, or 338°F (170°C) for conventional heating. Line a baking tray with parchment paper.
  • Melt the Chocolate and Butter: In a heatproof bowl, combine chopped dark chocolate and butter. Place over a simmering pan of water (double boiler method), stirring until melted and smooth. Remove from heat and stir in vanilla extract.
  • Whip the Eggs and Sugars: Beat eggs, caster sugar, and demerara sugar with an electric hand whisk on high until light, thick, and fluffy.
  • Combine the Dry Ingredients: Sift flour, cocoa powder, baking powder, salt, and chocolate chips into a separate bowl.
  • Mix the Batter: Gradually fold the melted chocolate mixture into the whipped eggs and sugar. Then fold in the dry ingredients with a spatula, being careful not to overmix.
  • Scoop and Bake: Drop tablespoons of batter onto the prepared baking tray, spaced apart. Bake for 12–14 minutes until the tops are crackly but the centers remain soft.
  • Cool and Finish: Remove from the oven, sprinkle with sea salt (optional), and let them cool on the tray for 10 minutes before transferring to a wire rack.
